Yellowfin Tuna

The yellowfin tuna is largely marketed as ahi tuna. It lives in most tropical and subtropical waters around the world. In the United States lives on the Atlantic coast with a range from Massachusetts to Texas.

Its average weight is 30 to 150 pounds however they have been known to grow to as large as  400 pounds. It has a blue back with yellowish tinges on its sides and hence receives its name from its yellow tail and belly fins. They are very fast swimmers, reaching speeds of up to 50 miles per hour. Many fishermen believe that, pound for pound, the yellowfin is the strongest fighter of the tuna family.  It is also found under the names of atun or tunny and is very popular off the coast of southern California. The yellowfin has a meat that ranges from pink in a young fish to deep red in a mature one. It will turn brown to grayish brown when cooked.  It is rich in flavor with a moderate fat content and a firm texture. Yellowfin tuna is often served raw.
